Our Shiraz grapes were picked at night to preserve fruit flavours, and transferred immediately to a mixture of open-top and rotary fermenters. Fermenters were hand-plunged daily to extract tannins and colour. The wine was then transferred to a mixture of new and old hogsheads, both French and American. Oak was carefully selected to bring out the flavours and the tannins in the wine while adding a touch of complexity and length to the palate. The wine was left to mature in this oak for 11 months.
