    A traditional sparkling white reminiscent of the French style, it has aromas of mushroom and fresh bread. It’s a full-bodied sparkling with a rich mouthfeel from extended lees contact. Toast, strawberry and crisp green apple fill the palate from extended lees contact finishing with a persistent bead and a touch of fruit sweetness from the strawberry (from the Pinot Noir).

    The wine is a blend of the classic sparkling varieties, Pinot Noir and Chardonnay. The grapes are hand-picked based on their acidity and flavour profile and then gently pressed to extract the delicate free run juice. This is slowly fermented at low temperatures to protect the fruit characteristics, before careful blending and tirage bottling. Made using the traditional method, it spent 4 years on lees in bottle, leading to excellent complexity including bread and honey notes. The Pinot Noir contributes some subtle red berry characters and provides backbone while the Chardonnay provides delicate citrus notes.
